I am trying to figure out a way to smoke briskets
overnight. I have a 20x36 Klose smoker, one of the
best things I've ever bought, and would like some
advice from someone who's BTDT. I don't have enough
free daylight, even on the we
ekends, to watch a pit.
Is it possible? I've been thinking of filling the fire
box up with wood and giving it a run but don't relish
the idea of waking to a nice brisket cold and ruined.
